Really wide boats make sense for larger paddlers who are proportionally larger. For average-sized folks, it would pay to think about spending 300+ hours on a boat that is just right for where you will end up--not what will feel comfortable for the first couple months of paddling.
Narrow isn't always better, wider isn't always better. Better is what feels perfect to you after you're past your initially steep learning curve. Best to pass the learning curve and decide what you like in rental or borrowed boats. You'll get a better idea of what hull size and shape you like to paddle, and should ultimately build. And your precious handiwork won't be quickly outgrown.
