I agree with Chip. I`ve made a Coho and a Tern 14 like yours and my advice would be to start it right now!
I know you don`t want to make mistakes, but trust me, Pygmy has this S+G thing dailed. It would be pretty hard to make a screw up that you can`t recover from.
Having said that I know exactly what you mean about avoiding the dreaded "Pygmy stripe". On the second boat I avoided this by sealing all the wood with epoxy before doing the butt joints. This will prevent the odd colored stripe. Then, as you mention, I glassed only the inside of the joint. This will prevent the "bump" of built up glass on the outsde seams. Lastly, I put six inch Carbon fiber "ribs" on all the seams and under the deck just aft of cockpit to bombproof this vulnerable area.
The most elegant solution by far is the floating tenon employed by Mike Hanks and Ted Henry. They and a friend used a shaper with a very thin kerf blade to remove the inner plys, then glued in a floating mortise. All but invisible and super strong. Mr. Henry used to have pictures on his site, but it seems to be down at the moment.
