Acetone will dissolve epoxy, albeit slowly. Your best bet is to hit it with vinegar before it cures. Vinegar doesn't dissolve it, but it neutralizes it so it won't cure. I find that denatured alcohol dissolves uncured epoxy well and isn't as noxious as other alternatives like lacquer thinner.
