Hey Kurt,
If you managed to keep the strips pulled up tight to the forms and achieved that "pinched" stern, then you probably will have it whipped. I think I'd still keep the keel kind of sharp till I saw how it handled. You can always round it later and re-seal it. I didn't do either on my wife's Guilly and it ended up being very responsive. Sounds like you're on the right "track".(pun intended)
