Look for R2K3 pictures on Redfish Kayaks site. I believe Ted Henry had some good pictures of what you are talking about. I don't remember if it was his boat or not, but someone there had some good shots. Maybe Bill Price's picture album.

I think the Great Auk would fill the bill for your purposes. Check with Nick or some of those that have built them...
