I would think that your marine goop or silicone RTV would work fine. The only load on them is one that pushes them against the hatch; it's not a peel-off load. Varnish the wood fittings first, then glue 'em on. If the glue doesn't work, then you can always do the method of sanding the varnish off at a later date.
