Chris,
As everyone else has said it looks like grain run-out. I've found that sometimes having the edges of your ribs rounded off reduces the chances of the wood splitting. Use a backing strap they work wonders. vary the time you cook the ribs sometimes this helps. But, once in a while you'll get a perfect piece of wood that wont bend no matter what. Wooden boat had a article on selecting wood for bending a couple of isues back, check it out.
