It may not be exactly the boat you want, but Mechanix Illustrated How-to-do-it Encyclopedia Volume 3 has a kayak. This book was published in 1961 and may be available on the used book market.
The kayak in this book is called the "Canvasback" and is a skin-on-frame design with plywood forms and covered with canvas.
