I would not recommend adding strips over strips, unless you were going to paint the hull. Wherever the new top strips end and you sand flush, a glue joint line will be quite visible even if you used epoxy. (never use carpenters glue for a lamination like that).
The small inditations will not be that noticable once it's varnished with deck lines put on etc. Due the best you can to make it fair without getting too thin and go to the finishing stage of glass and varnish. Everyone learns a few of these little lessons about fairing and stripping on their first boat and that's what pushes us ahead to make better ones. My first stripper had some uneveness too and nobody noticed it and the person who bought it thought it was fabulous and still loves it. All builders know where they have a little problem area. The experienced ones know how to keep it a secret.
