Pricing hand-crafted items is hard. You must strike a balance between what you should get, what the market will bear, and what you would like to get. I think your example of Benner Boat and Action Fish illustrates this problem. Both companies are actually the same person. By forming two brand names, he is able to test the market at two different price points. It is unlikely the difference between staples and no-staples fully accounts for the $4,000 price difference. Instead, this is probably an effort to "bracket" the market between two somewhat arbitrary points and see which makes more money.
I don't think the market for hand-crafted wood kayaks is sufficiently established to have anything resembling a "standard" for pricing. Each builder makes up their own mind what they want to get, and each buyer decides on their own if the price makes sense for what they are getting. All I can suggest is figure out the costs to make your boat including material, labor and overhead, then come up with a price which may be above or below "cost". Try to sell the boat at that price. If it sells really quickly, charge more next time. If it doesn't sell, drop the price.
