Wood/fiberglass can mean different things. Strip built? 'Glass over plywood?
Glassed over wood/canvas?
In any case you'll eat a lot of dirt taking it down to the wood. Unless this boat is something extra special it's not worth doing.
If the existing 'glass/resin is stuck to the wood a vigorous sanding and a couple of coats of epoxy will pretty it up.
For most boats of unknown origin this low cost low effort approach is the way to go.
