Before you break out the epoxy, please read my post. It will save you a lot of work and possibly some grief.
Red oak's reputation for rot comes from the shipbuilding industry, where it is not considered an ideal wood. Kayaks are not subject to the same issues and red oak works wonderfully. BTW, I've verified this with a friend who works at a shipbuilding museum.
