That's how I did it. It wasn't that hard either. I made the first laminates a little long, then cut them off and butted the next laminates up to them. It's not a hard thing to do and I think it looks good that way.

I did it a similar way on my sons kayak. I laminated the lip just past the place where the arrow was to go through it, cut the laminate, and glued woodstrips in a fwd/aft direction to match the arrow.
