How about a different tact? What about sewing in a giant sea-sock front and back with a roll-down dry bag-type top that comes through the deck? Add a sea-sock into the cockpit and you have basically replicated much of the benefit of bulkheads and hatches.

I remember some discussion of a similar type of arrangement on a traditional boat design that utilized, essentially, a drawstring opening in the deck to enanble the paddler to reach below deck.
