I do not think that dog would cause much problem for tippyness. I find the S&G version of the Guillemot very stable.

Maybe you could just make the hatch larger, and the dog could sit in your lap. this implies paddling without a spray skirt though... but if you have the hatch opening into the foot area, there is not much difference.

why not go rent a kayak, and see if the dog will go into one of the standard hatches, or fit with you in the cockpit?
