I tried our K1 boat this weekend for the first time and had a similar experience. As I would start to go over on one side I would paddle a little harder to stay up. This would send me over the other way so I would paddle harder sending me into a death spiral as the K1 accelerated to speeds I have never before achieved in any kayak right before going upside down. After an hour I could stay up by wild bracing. All this braceing slowes you down to speed at which the boat is even more unstable.
I brought it to the Newfound gathering. A lot of people wanted to give it a try. The average distance before turning turtle was about 12 feet. Nick Schade had the record by going 100yd but fliped trying to turn around.
I hear it takes a year of practice before you can stay upright comfortably.
