Heat. and maybe steam.
If you gently heat the old coating of glass and epoxy resin to about 300 degrees F the epoxy will soften and you can peel back the glass, taking with it most of the plastic resin. This saves you from turning a few pounds of glass fibers into a dust which you might inhale.
Once you get started, a flexible putty knife riding on top of the wood, and under the glass cloth will separate the two.
Try a small area and see fi this works for you.
Any resin left behind will have either soaked deeply into the wood, or be very easy to hand sand without going into the soft, underlying wood.
The wood will char at about 450 degrees F, so you want to be careful not to overheat an area if you use a heat gun. If you use the output from a steamer you could get a temperaure hot enough to soften the resin,and with enough heat energy (BTUs) to soften a large area quickly, but it would not be hot enough to char your wood.
If you want to experiment with this, consider renting a steamer such as one used for removing wallpaper.
If you try steam, once you started to soften the resin, if your steam is under any pressure, you could direct the output of the steamer under the glass, letting the heat of the steam soften the fiberglass work, and the pressure would separate it from the wood hull.
After you remove the glass from the outside of the boat, reglass it before you try to remove the glass from the inside. You don't want to have all the glass off at the same time-- you need to keep something in place to hold the boat together.
