Andy,
The port /starboard boat sounds interesting. Finishing the keel would be a breeze, but the deck would be a little harder. All from the three holes for hatches and cockpit. And the combing on some models would be after the fact also! I think it is doable, buy how much of the artistic work will show in the water? You only see what is above the water line.
