That has to the the understatement of the year on the Kayak Bulletin Board 
Were you even able to find that edge after the Class VI rapids??

: If you bevel that knife edge will be susceptible to damage because it will be
: weak. Glassing over that knife edge is tough, as well, so you will have to
: fuss with it a lot. My first kayak was done with the bevel. I had a
: difficult time glassing over it and I did manage to crunch the edge up

: Unbevelled, you can fillet it, make it easier to glass and thus produce a
: stronger keel. It's also a small time saving not to bevel, so that means
: you get it into the water that much quicker. My $0.02.
