The beauty of the Skin on Frame building process is the fact that the design is infinitely variable/adjustable for each persons size and weight. The rules of thumb are the length of boat is usually three X your arm span, and beam will be your hips plus two fists. I'm very near your size and the above dimensiones would produce a Kayak that would measure 18'6" loa and 24" beam.
You should have no trouble building a kayak to fit you from either Cunningham's or Morris's books on Skin on Frame building
