For perfect centerlines, it's a simple matter to mark the center at each end, make a tiny knife cut and run a thread from one end to the other. Using this method, it doesn't matter if the board is straight or not. Keep in mind that when you start removing material, it's entirely possible that the paddle will change shape as internal stresses in the wood are released.
