I have three canoes, a wood strip, a royalex (solos) and a Duralite Tandem. I have recently taken up canoe sailing and will not be happy until I have built a fully decked 50/50 canoe (sail and paddle) like the old Rob Roys.

Check out:http://westsystem.com/ewmag/16/index16.html

For info on moderrn sail canoes. Hugh Horton uses a Bell Flashfire hull. Since I have more time than money I hoped to laminate a hull using carbon and kevlar over my woodstrip and then deck that. If I could pull it off it would a good looking 50/50.

I realize I could just build another stripper or even S&G but I like to try new things. Like you mentioned I am intrigued by the process...
