I'm not a chemist, but I don't thing humidity has any thing to do with epoxy cure. Temp is the biggy in curing epoxy. Small electric heaters can really help in slightly lower temps. Cover it with some make shift tent, and set the heater inside on a low setting.

P.S. Heaters have been known to burn down dwellings and work shops if not properly set far enough away from combustibles!
