Remember that if you have a board that is 11/16 inch thick that it will become strips that are 11/16 inches WIDE and probably 1/4 inch thick. The 1/4 inche dimension is the one that matters for strength and you still control that when you cut the strips. The 3/4 inches dimension is just a compromise for the convenience of covering a significant area with each strip balanced against the ability to strip around tight curves.
You shouldn't lose any of the width of the strip in the cove and bead milling process. Beacuse your strips are a shade narrow you will need a few more strips to go around the boat, but the total number of extra strips should be less than a half dozen.
