I'm using blue tarps attached to the side of the house this time (1/2 a hoop house) but with my last kayak I used clear plastic over the veranda. This worked well as a sun trap which warmed up the whole house
If building on grass or dirt you may want to put a floor down. This will enable you to clean up the dust before glassing and varnishing and will stop any water seeping under the walls. Cheap ply, pallets, or even just a sheet of plastic laid down before glassing will help. An advantage of building in these temporary shelters is that once the sanding is done you can just cover up the yak, remove your tools and walk into the place brandishing a hose. One of the best ways to remove dust from the walls etc.
If you plan to join any plastic together with the clear tape sold for the purpose, don't rely on it to hold in strong winds. Also a tent covering the kayak will help avoid any condensation drips etc on your epoxy / varnish. I have just used cheap plastic drop sheets for mine.
