I've never experianced it but would assume that as the epoxy cures the chances of outgassing lessen. If it gets very cold where you are you could heat up the work area with a radiator before glassing then switch to some light bulbs afterwards to keep the temp above the minimum requried for curing. A fast hardener would also help.

Your joints cover such a small surface area I doubt that outgassing will weaken them so it would just be cosmetic.
