Chas,
Advice on kits: If time is not an issue, you have patience AND can build a bookcase, own a few tools, and have a desire to build a boat - don't get a kayak as a kit. You can build the same kayak (with exception to those that don't offer plans) for about half the cost and you can build it from scratch.
The experience that you will gain as you go along is immeasurable. Most plans for strip or S&G kayaks come with excellent step by step instructions, and that's all you really need to build the boat - it's all step by step. There are however many additional resources, and I would recommend you read as much info as possible (mostly to choose a design that fits your size/needs). This site is also a great source of information or to ask questions if/when you get stumped.

Now, why not consider building with both S&G and strip methods by building a hybrid? All you need are plans for your favorite S&G design and build the hull only. While doing this, you will gain the required experience to work with fiberglass and epoxy, as well as brushing up on woodworking (you won't need many tools). Any minor mistakes on the hull can be covered with colored epoxy or paint. The first few steps go fairly quickly (few days) and before you know it, you've got what looks like a kayak. Again, follow the directions and finish the hull. Then cut or buy strips for the deck. There's nothing quite like the looks of woodstrip. Keep in mind that everything you need can be purchased separately or cut out yourself.

Before you know it, you'll have your second or third boat picked-out. Whatever you choose, get to it, you'll never regret it, only wonder why you didn't start sooner.

PS-Search Skin-On-Frame (SOF) kayaks as well (In my opinion, all of the different methods of kayak building are about the same difficulty level, some just take longer to complete than others).

Also consider trying any of these methods on a small scale model, either first or as a side project, you may enjoy that also.
