Everybodies' ability to do a fiberglass-epoxy layup depends on what they know before they start slathering on the resin. From what you posted it's obvious that you didn't do any homework before you dove into this project. There are any number of books for $20 or less that can walk you thru' the lamination schedual. Same thing with info on various epoxies. There are all kinds and their manufacturers give out dope sheets about their products and the conditions required for successful use. Some of this stuff is a free download. West Systems has a site with all their dope sheets.
When epoxy is applied layer on layer there is a possibility that the layers will not cross-link if too much time elapses between coats. The culprit is a waxy layer that comes to the top called amin blush.
I favor the wet-on-wet approach. If a new layer is applied when the previous layer has stiffened but is still green the waxy amin blush products haven't had enough time to come to the surface. Once time has elapsed and the amin blush has come to the top the amin blush has to be washed off before continuing.
After epoxy has been spread it will take much longer to kick. Using a fast hardener will speed things up but you have to spread this stuff quickly because while it's in the cup heat can build up and cause the resin to kick unexpectidly.
