Ya gotta consider the screw down hatch closures that Eric Schade shows on his site at Shearwater Boats. They are incredibly secure and mine don't leak at all. I used very small wooden knobs for the closures and they are very unobtrusive, small and low enough so as to not be a hinderance during re-entrys etc. My deck is also peaked and the closure system nestles into the 'V' beautifully. I put a compression spring between the hatch and the closure bar that pops the hatch up eliminating the need for finger grooves. It's worth a look.
