Mineral spirits should be OK, but I prefer lacquer thinner which is said to be more "pure". But an advantage of the epoxy is to seal the wood up so you don't end up forcing dissolved spray adhesive into the open grain. Again this probably is not a problem. In the end I just think epoxy sealed wood will just be easier to clean than non-sealed wood.
