I used ash pinstripes on my last boat. They were about 3/32" wide, made them on the table saw with the same 7" thin kerf saw blade I used to rip the strips.
Ash was a bad choice; nearly any other wood would have been better. I lost quite a few due to the nature of the ash.

Someone else on the board suggested not stripping the pinstripes individually, but actually sistering them with the full width strip they were next to, and gluing them both at the same time. I followed that advice, and it worked well. My pinstriping did not add an unreasonable amount of time, after I got the pinstripes ripped. I used lots of spring clamps to keep the pinstripes fair with the other strips- they do want to squirt in or out.
