I find pinstriping to be fairly easy. Yellow cedar makes great strips down to 1/16 that don't break, even in very long lengths. I have used WRC down to 1/8 in a similar fashion. I could probably go thinner, I just haven't tried. Ripping them on a table saw is easy with a nice sharp blade, a good fence, and a zero clearance insert. Since the thin strips are very flexible, it takes little force to glue them in place. Use tape (masking, packing, etc) every couple inches and you are in business. Use your fingers to press firmly in gaps between tape pieces to squeeze out excess glue.
