You can basically make any wooden kayak into a take-apart. All you need to do is build the kayak of your choice, then cut it into halves or thirds at the bulk-heads, add new bulkheads to the now open sections, then rig up bolts to hold it all together. If you do it this way, you can effectively convert any length of kayak. Otherwise, Waters Dancing has a take-apart kayak you can buy as a kit. It is a 12-footer with a 26-inch beam, very stable but short. it's a good river tripper, very maneuverable and can carry enough stuff for a weekend camping trip. There isn't a picture of it here but if you ask nicely I can stop by Donnie's and take one for you.
