Sage,

A couple of benefits come to mind that could be called structural. The first fill coat is a water barrier - wet wood is less stiff/strong than dry wood. Fill coats add some stiffness to the glass layer, especially with open weaves and under compression loading - not the most efficient way to do it, but better than high fill primer.
