I didn't pinch them, either. I think the kayak looks great. If I had pinched the gunwales, I would definitely have planed them.

Why didn't I pinch the gunwales? I only had 16' boards to work with, and I was concerned about making a submarine. Never having built an SOF before (let alone one 18" wide), I had no data point to work with. I wanted to make sure I had sufficient volume. I still have a good 2" of freeboard, so next time, I might pinch the gunwales on a 17' kayak.
