I think the analogy is a little off. Inside 'glass doesn't contribute to the encapsulation on S&G. As long as the epoxy coat is tight the wood is protected.
Interior 'glass may be the accepted level of sophistication today but plenty of older boats were built without any interior 'glass and have been around for a decade or more without rotting.
My 'yak is only 3mm thick everywhere but at the keel. It's finished bright so I can check the condition of the ply periodically. I need lightness do to old age so I've had to forego some of the bells and whistles. Storing my boats in a heated and somewhat dry basement in the winter helps cook the moisture out of them.
