In a Stitch & Glue watch your epoxy usage. Someone said here that the heaviest thing they carried into their shop when building their kayak was the epoxy. Two areas to keep an eye on. 1) Fillet thickness. Make your fillets as small as you can, just enough radius to allow the glass to lay flat around the inside corners. 2) Glass layup. There are a lot of methods to minimize excess epoxy in the layup. One of the easiest is to squeegee the excess off before it sets up.

As far as glassing the underside of the deck, I'd avoid that unless the deck design made it particularly suseptible to damage.
