Am afraid I don't have experience with cypress either, but I have had good luck laminating glass tape into my cedar GPs, which could counter any concerns you might have about strength (of cypress or cedar). This would free you to decide based on other factors - like weight, grain, workability, and durability. F.Y.I., I lay my blanks up with glass and graphite-impregnated epoxy, making for a nice black "pinstripe" between pieces.
