that's how I did the coho I made,,did the seam on the inside through the cockpit for a comfortable distance then finished through the hatches. I'd suggest going for the simplest hatch closure mechanisms, swiveling pieces of ply going through very strong multiple layers of of the recess and spacer. You can see if they are on or not.
