This is all assuming that you have a fast hull shape to begin with. You can do all the fairing & wet sanding you want and If someone has a faster hull, their boat will be faster. Much of the big money spent on 12 meter racing technology has to do with hull shape. The bottom line is, I don't think there's and magical finish that's going to help the strip builder notice anything faster than a good fairing job (as you say) and a finly polished surface (your choice of finishes).
