Gordon,
Using epoxy between strips is overkill. The woodstrip hull is the CORE for a fiberglass boat. The core has to be straight and fair and pretty but it doesn't have to be strong. Most of the strength of a stripper is in the 'glass. The wooden core does contribute to stiffness by holding the 'glass layers apart.
The more finicky builders use different types of wood glue to keep the glue lines from showing thru' the glass but cheap Elmers will get the job done.
If you check Moores, Hazen and Gilpatrick, who also did books on strippers, they all agree with Nick Schade.
