Steve,
Plywood is wonderful stuff to build boat hulls from. The boats go together quickly and there is much less fairing/sanding than on a stripper.
Because plywood is made from wood verneers that are oriented to enhance the strength/stiffness of the laminate it produces hulls that are also stiff and fairly light. On a four panel, hard chine hull the sides act like the web of an I-beam so flex is held to a minimum.
An unsheathed S&G hull doesn't have the impact or abrasion resistance of a stripper but if you're after light weight S&G can go low with the best of them.
As luck would have it I just finished patching some holes in my good ol' Yare.
It's only 3mm thick but it took a flyer off the top of my truck and only suffered a couple of punctures and cracks.

: That said I would never use epoxy on the strip joints. I can only see a very
: messy hard too clean up and slow to build situation compared to just using
: titebond.
