I built a strip canoe by beveling the edges. A few comments:
You only bevel one of the two mating surfaces. The mating edge on the strip being added.
If you just slightly over bevel (too much angle) it guarantees that the outside corner touches (the side that shows the most). In fact, I used a jointer to constant bevel (not rolling bevel) my strips. I did vary the constant bevel from strip to strip. The hairline gap on the inside varied in width but still filled with glue. Canoes do have less twist in the strips than kayaks so a rolling bevel was not necessary. Rolling bevels are only needed where there is a lot of strip twist.
Accent stripes need to be beveled not bead and cove at the changes in color to maintain a sharp straight line after fairing.
Daylighting only shows from the inside.
