Jeff,
If you don't want to wait, you could build your own jig, and use the scarysharp system recommended by Rich.
This link has a some homemade jigs under the sharpening header: http://home.earthlink.net/~kvaughn65/jigs.html
or this one:
http://www.amgron.clara.net/sharpeningpoints/HoningJig/hgindex.htm
If amazon.co.uk is faster, they have some waterstones
http://www.amazon.co.uk/exec/obidos/search-handle-url/index=kitchen-uk&field-keywords=whetstone&bq=1/ref=sr_aps_all/026-8031739-6094848
This company appears to stok the Veritas jig and is in the UK:
http://www.toolpost.co.uk/system/index.html (Under sharpening accessorys)
This site appears to have everything and is in the UK:
http://www.axminster.co.uk/default.asp?prod=12
I've gotten all my stones from LeeValley/Veritas, and use their honing jig as well.
Aaron
