Go to Vaclav's site (www.OneOceanKayaks.com) and you can buy his Stitch & Glue Manual which describes the process for building his Cirrus. It's a little different than the process in The New Kayak Shop which will show you there's many ways to go at it. Also, other kit makers designs require different methods than those in TNKS which corresponds to boats from Chesapeake Light Craft.
There's also a really good online journal from a guy who built a Pygmy Osprey Standard that I read many times to get the details of how he built his boat. It's at

This one's probably the best for showing you all the details and the trials and tribulations. There are lots of online journals where people have posted their projects. I think those will give you a better idea of what to expect.
