I moved from a lurker to building a guillemot s&g and then another one (kids sorted) and now I am halfway through stripping an Expedition Single. Primarily I think having lots of space around the Kayak makes life easy. The more space the easier things will be.
As for height, I have a bad back and with all the bending and twisting no height is ideal. I built the stands in Nicks Book and they ended up 1 metre high. That is not a bad working height at all and enables lots of eye-balling to check for symetry etc. However, my forms on the stands looked a bit weird at first, like they were way too high - that was just my first impressions.
I built my guillemot s&gs on a long skinny table of chipboard on standard saw horses (2 ft high??)and that worked, but was too low for comfort.
