Glenn,
The higher the better for me. I also have back problems, so the less bending the better. Keep in mind you can adjust the height by adding blocks under the strongback as well. When finishing you will no longer be on the strong back, but on a strapped horse. I still keep it high. I find it easier to step up on something, than to bend over for any length of time.
