I'd position the boat fairly high when you are working on it, but like anything else involving kayaks, it's a compromise. You'll be spending a lot of time sighting down the length of the kayak checking for alignment and fairness, which suggests high is better. But then there are times when you're fastening a strip with a lot of twist in it that you want to bear down hard on it and slam a staple home.

You piqued my curiosity, so I went out to my shop and measured my stripping sawhorses, which are 39 inches hight (I'm 6 feet tall). My workbenches are the same height. I also have a bunch of 31 inch sawhorses that I just built a hybrid stitch & glue/strip deck kayak on. They were a nusiance when the boat was right-side up and I needed to tweak the keel stitching. But for most of the rest of the work they were comfortable.
