An ergonomist would tell you that the best ergonomic work height is where the average height of your workpiece is just below elbow height.

If your top of hull is at your elbows, your sheer will be near your waist. I think you're on the right track.

You don't want to work stooped over (which fatigues your back), nor work so you are lifting your upper arms too much (which fatigues your shoulders and neck).
