I used 2 saw horses for my bases for my Guillemot Double. I screwed notched 2x4's which secured my 2x4 strongback to the saw horses for the beginning. Once you get a third of the way done with the hull, just lower the notched supports down a foot or so. This will allow you to work on top of the hull at a more comfortable height which will allow you to better see and work the final strips.

To do the deck, take these support 2x4's, attach them to the sides with 2 additional support pieces and add a carpet strip to form a cradle to hold the hull as you complete the deck. Once again you can lower the supports as you work your way to the top of the deck.

Some people make elaborate strongbacks. I elected to keep it simple, cheap, easy, not over engineered (like I normally do with other projects), and adjustable in just minutes for a comfortable working height.
